Chili-Lime Chicken Soup

Ingredients
1 tbsp grapeseed oil1cup chopped onion2 fresh serrano peppers, seeded, and minced1 cup fresh tomatoes chopped3 cloves garlic, chopped8 cups chicken broth1 tsp cracked black pepper1 tsp salt6 limes (need juice from 3-4, and half lime for soup, the rest should be sliced for garnish)2 cups shredded chicken (white meat)1/3 cup chopped cilantro
Directions
1. In a soup pot, heat the oil and saute' the chopped onion and chiles until onions are soft. Add tomatoes and garlic and cook until tomatoes are soft and garlic is fragrant.
2. Add chicken broth, pepper, thyme and salt to the pot and bring to a boil. Rduce heat and add lime juice, plus a lime half. Simmer soup for 30 minutes.
3. Remove lime half, add the shredded chicken, simmer for 15 minutes. Stir in cilantro and simmer for 5 more minutes.
TO SERVE: Ladle 1 cup portions of soup into individual bowls. Garnish with avocado slices or tortilla chips if desired (Garnishes not included in nutritional info).
