Quickie Imitation Crab Salad

Ingredients
1 Pkg (9 oz) Imitation Crab Meat, chopped up1/2 Med Red Bell Pepper, chopped1/4 - 1/2 C Onion, Chopped (I used half cup - love onions)10 Jumbo (approx 1/2 cup) Black Olives, Sliced2 tsp Celery Seed1 tsp Ground Ginger Root3 Tbl Real Mayo or Reduced Fat Mayo1 Tbl Horseradish SauceDash Red Wine Vinegar12 leaves Romain Lettuce1/4 - 1/2 C Shredded Cheese
Directions
Chop crab meat, onions, peppers, and olives. Put in large bowl, sprinkle with celery seed and gr ginger root and dash of Red Wine Vinegar (optional). Add Mayo and Horseradish sauce. Stir til coated. Refridgerate until needed. Put 3 leaves on 4 plates top with 1/2 cup Crab mixture. Sprinkle with about 2 tablespoons of shredded cheese on each. Serve chilled.
