Carrot Bran Flax Muffins

Ingredients
1-1/2 cup whole wheat pastry flour3/4 cup oat bran3/4 cup flax meal (ground flax)2 tsp baking soda1 tsp baking powder1 cup granulated or brown sugar 4 cups grated carrots1/2 cup raisins1 cup plain fortified soymilk2 eggs2 tbsp canola oil1 tsp vanilla extract
Directions
Mix together dry ingredients, including sugar.
Beat eggs and wet ingredients. Add to dry ingredients.
Fold in grated carrots and raisins.
Spray muffin tins well with nonstick spray or muffin liners.
Bake at 350*F for 15-17 minutes.
