Green Lentils with Spinach and Ginger (1 cup serving)

Ingredients
Green Lentils, Dried, 200 gramsWater, tap, 750 mLVegetable Oil, 1 tbspJalapeno Peppers, 2 Ginger Root, 2 slices (1" diameter)Cilantro, 1 cupSpinach, fresh, 2 10 oz packagesSalt, 1 tspPepper, black, 1/2 tspLemon juice, 2 tbspTomato Paste, 1/4 cup
Directions
Put the lentils and water into a heavy pan and bring to a boil. Cover, turn heat to low and simmer for 1 hour. Put the oil in a pan large enough to hold the spinach and set over medium heat. When hot, put in the chilies and the ginger. Stir fry for 10 seconds. Add the fresh coriander and spinach. Stir and cook until the spinach has wilted. Now put in the cooked lentils and the salt. Add tomato paste, stir and mix and bring to a simmer. Cover and cook very gently for 25 minutes. Add the black pepper and lemon juice, stir to mix and cook uncovered for 5 minutes. Check seasonings.
