Christmas Muffins with Jam Centers

Ingredients
Dry Ingredients1 cup rice flour1/2 cup bean flour1/2 cup amaranth flour1 tsp baking soda1/2 tsp salt2 tsp baking powder1/2 cup sugar1 tsp xanthan gumWet Ingredients2 eggs4 Tbsp butter, melted1 cup plain yogurt1/2 milk2 Tbsp honey1 tsp vanilla1/2 cup any jam you like(I used strawberry for the calorie count)
Directions
Preheat oven to 400. Prepare 12 muffin cups. Mix dry ingredients. Mix wet ingredients. Add the dry ingredients to the wet ones. Batter will be lumpy. Do NOT over mix. Spoon a Tbsp of batter into muffin cups. Add jam and then fill the cup with batter. Bake for 20 minutes at 400 degrees.

Makes 12 muffins.
