Gluten free Sweet Potato Casserole

Ingredients
Sweet potato, 4 sweetpotato, 5" long (4C of mashed) Applesauce, unsweetened, 1 cup Maple Syrup, 1 tbsp (organic) Almond Breeze Almond Milk, Unsweetened Vanilla, 6 oz Honey, .5 cup *Mini Marshmallows - 1/2 cup (25g) (about 48 marshmallows)/serving, 1 serving
Directions
Boil an mash the sweet potatoes after draining them. Mix in the rest of the above ingredients except the marshmallows. Mix with mixer for smoother, fluffier casserole.
Spread in a 9x13 pan cover with marshmallows. Bake in 350 degree oven for 30 minutes, the marshmallows should brown.
