Curry in a Hurry

Ingredients
2 28 oz cans Petite Diced Tomatoes2 lbs Round Steak2 Red or Green Bell Peppers2 Zuchinni Squash1 Cup Mushrooms1 Large Onion2 cups broccoli2 cups diced potatoes1 can coconut Milk4oz jar of Curry Powder2 Tbs Cooking Oil
Directions
1. Cut the round steak into 1 inch cubes. Place in 2 Tbs of cooking oil in to large pot. Brown the meat for 5 minutes. Add 2 cans of diced tomatoes and bring to a boil. Turn down the heat and simmer for 1 hour.
2. Add the vegetables and cook 45 minutes more.
3. Add Coconut Milk and cook another 15 minutes.
4. Serve with couscous or rice.
