Velveeta cheesy chicken & Broccoli Rice

Ingredients
1lb. boneless skinless chicken breasts,cut into bite-sized pieces1 can 14.5 oz chicken broth2 cups instant white rice, uncooked 8oz. Velveeta pasteurized prepared cheese product, cut up1 pkg. frozen chopped broccoli, thawed
Directions
SPRAY large skillet with cooking spray. Add chicken; cook and stir 2 min. or until no longer pink.
STIR in broth. Bring to boil.
ADD rice, VELVEETA and broccoli; cover. Remove from heat. Let stand 10 min. Stir until VELVEETA is completely melted and mixture is well blended.

    This was a good recipe. My family loved it, I aded some low fat shredded cheddar to the top of the dish to make it alittle cheesier but over all it was wonderful! - 8/31/09

    The basic idea of this recipe is good, but the nutrition tracker is way off. It's caculated for 1 single chicken breast, not a whole pound. I also found that Great Value chicken broth only has 5 calories as opposed to 77. I would make it again, just use my own caculations. - 4/14/08
