2 medium heads cauliflower (i used purple)1/2 cup 2% milk1 tbsp butter1/2 tsp saltdash of black pepper
remove the leaves from the cauliflower and cut into florets. add to boiling water and simmer until very soft--about 20 minutes. drain. add the rest of the ingredients to the warm pan and stir. add the drained cauliflower. mash with a potato masher. if desired, use an immersion blender for a smoother texture.
