Mustard greens Indian Way

Ingredients
Mustard greens 2 bunches about 800 gramsSpinach 1 bunch about 450 gramsBesan-2 tablespoonA small onion- thin slicedPlumTomatoes 2 - choppedGinger- 1 teaspoon mincedGarlic-3 cloves mincedOlive Oil-2 tablespoonTurmeric-1/2 teaspoonCoriander powder-2 teaspoonCumin seeds-1 teaspoonSalt - 1 1/2 teaspoonButter - optional
Directions
Wash spinach and greens in plenty of water. Chop and cook it with 1/4 cup water until very soft. I pressure cook them. Then mash them with a potato masher.
Heat oil in a pan and cumin and besan.Fry until besan is toasted and light brown then add sliced onion and fry until translucent. Add minced ginger and garlic and fry for 2 minutes. Add tomatoes, turmeric, coriander powder and cover and cook until tomatoes are soft. Add cooked greens mix well then cover and cook until it starts to bubble.
Serve with your choice of bread.
In India people like this dish with little bit of butter on top.
