5 large eggsNon fat milk 2 tablespoons1 cup chopped cherry tomatoes3 oz extra lean ham chopped small.5 cup fat free shredded cheese of choice1 cup chopped broccoli2 Tablespoons chopped onion
Mix eggs and milk in a bowl. Add shredded cheese, ham and chopped vegetables. Season with salt and pepper.
Spoon mixture into muffin tins coated with cooking spray.
Baked at 350 degrees for about 20 minutes or until "set" and golden on top.
Refrigerate and pop in microwave for 30-40 seconds and serve
Serving Size: Makes 8 muffin sized fritatta's
