Toasted Grain Pilaf

Ingredients
2 C grain (amaranth, millet, quinoa or all three)1/4 or 1/8 tsp curry powder4 C vegetable broth1/4 C sun dried tomatoes (not in oil)1/2 C purified water1/2 C shredded zuccini1/2 C summer squash1/4 C minced red bell pepper1/4 C green onionssalt to taste
Directions
Toast grain + curry, add broth. Soak sun-dried tomatoes in 1/2 C boiling water 15 min. Shred or mince vegetables, steam-fry in tomatoe water. Add vegetables to grain.
