Quick Pumpkin Pancakes

Ingredients
2/3 cup whole wheat pancake mix2/3 cup vanilla rice milk1/3 cup canned pumpkin1 tsp pumpkin pie spice2 tbsp Splenda baking sugar blend
Directions
Mix all the ingredients, spray cooking spray into pan, pour small amount of pancake batter into pan & swirl to spread. Cook each side until golden brown.
Makes 3 pancakes per serving, about 3 servings.

    Loved this. Froze the extras. A little gooey but I added more rice milk which made it easier to spread. Delicious with peanut butter and syrup on top. I'd make them again. - 7/6/09

    I made this using 1/4 measuring cup and with the amount of batter it only made 6 pancakes. I will have them today and hopefully enjoy them but there will be only two for each of us. I am sticking with the calorie count and hoping that it isn't over what is stated. Rating is good but I haven't eaten - 8/24/19

    This recipe did not turn out for me. I tried making it thinner. It was still burnt on the outside and uncooked on the inside. I couldn't even flip the pancakes over. - 10/25/14

    Umm. What are the REAL carbs for this recipe? Somehow, 119.2g seems outrageous per serving. Doesn't add up anyway, with the ingredients listed. Correction needed? I can't go near this - if that is the case. Maybe 19.2g? - 10/5/13

    I also added some pureed tofu as well because my daughter doesn't eat enough protein. She loves them and I make large batches and freeze them to pop in the toaster for her. - 12/17/08
