Cranberry-Walnut Relish

Ingredients

4 c cranberries1 c granulated sugar1 envelope unflavored gelatin1/2 c orange juice1 c chopped celery1 c chopped apple1 c chopped walnuts
1. Wash cranberries, drain and remove stems
2. Chop in food processor using coarse blade
3. Add sugar, let stand for 15 minutes, stirring occasionally
4. Sprinkle gelatin over orange juice in small saucepan to soften
5. Place over low heat, stirring until gelatin is dissolved
6. Add gelatin mixture, celery, apple and nuts to cranberries, mix well
7. Place mixture into 1 qt mold
8. Refrigerate until firm, 6-8 hours
Serving Size: Makes 18 1/2-cup servings
