Tomato Basil Bisque

4 Tbsp. butter1 onion, diced6 celery stalks, diced1 bell pepper, seeded and cut into 1/4" julienne1 Tbsp. tomato paste1 (1-lb 12-oz.) can diced or chunked tomatoes1 (14.5-oz.) can diced or chunked tomatoes1 1/2 cups half and half3/4 cup light-packed fresh basil1 tsp. salt1/2 tsp. fresh ground black pepper1 1/2 tsp. sugar
In a large skillet, melt butter over medium-high heat. Add onions, celery and red pepper and saute about 10 minutes, until vegetables are soft. Stir in tomato paste and two cans of tomatoes. Bring to a boil, reduce heat to medium-low, partially cover, and simmer 20 minutes.
Off heat, stir in remaining ingredients. Let col slightly, then process in batches in a food processor fitted with a metal blade (or use a soup blender and blend in the pan). You do not want a smooth pure, but a texture that has some small chunks.
Can be made several hours ahead or the day before serving.
