Apple Pancake

Ingredients
1/2 stick butter1/2 c plain flour1/8 c sugar1 tsp cinnamon3 large eggspinch salt1 tsp vanilla extract3 small Gala or Granny Smith apples. peeled and sliced into 8ths
Directions
Melt butter over medium heat in a cast iron or other oven safe slillet. 10 inches is a good size.
Meanwhile peel, core and slice apples and add to butter in skillet. Mix i/2 of sugar with cinnamon and sprinkle over apples. Stir occasionally. Mix remaining ingredients in a bowl and whisk until smooth. Preheat oven to 450 F. Pour pancake over apples in skillet and let the bottom begin to firm. Place in oven. Reduce heat after 15 min to 350F. Done when puffed and golden. Pick inserted in center comes out clean.
