Fried Catfish with Hush Puppies

Ingredients
1.) 8 Cups of Peanut Oil2.) 6 (6 oz) Catfish fillets3.) 2 C All Purpose Flour4.) 2 C Buttermilk5.) 2 Large eggs6.) 3/4 C All Purpose Flour7.) 1/3 C Cornmeal8.) 1/3 C Buttermilk9.) 3 TBSP grated Onion10.) 1 TSP baking powder11.) 1 large egg, lightly beaten
Directions
1.) Clip a thermometer to a dutch oven and add oil. Heat until oil has reached 385 degrees.
2.) Pour 1 C flower, cornmeal, and pepper into a shallow bowl. Combine 2 C buttermilk and 2 eggs int sallow bowl. Sprinkle catfish with 1/2 TSP of salt. Dip catfish into milk/egg mixture then into dry mixture. Shake off excess dry mixture. Place 2 fillets into hot oil, cook 5 minutes until done. Make sure oil does not drop below 375 degrees. Remove fillets from pan with a slotted spoon, drain on a paper towel. Return oil temperature to 385 degrees. Repeat procedure with remaining 6 fillets.
3.) Combine 3/4 c of flour with 1/2 C cornmeal, 1/3 C of buttermilk, 3 TBSP grated onions, 1 TSP baking powder, 1/4 TSP of salt, 1/4 TSP ground red pepper, 1 large egg, lightly beaten. Drop batter 1 TBSP at a time into oil. Fry at 375 degrees for 5 minutes or until browned, turn frequently. Remove hush puppies from pan using a slotted spoon, drain on paper towels.

Serving Size: Yields 6 servings. (1 flillet and 2 Hush Puppies)
