Moose Barley Soup

1 tbsp olive oil24 oz moose meat, cut into small chunks1/2 medium onion, chopped3 medium carrots, small dice3 celery stalks, small dice3 garlic cloves, minced6 oz red wine5 cups water8 tsp beef bouillon concentrate0.4 cups pearl barley, raw2 bay leavessalt and pepper to taste
Cook moose in olive oil, set aside. De-glaze pan with a splash of red wine.
Add onion, carrots, celery and garlic, cook until tender. Add the rest of the wine, water, bouillon, barley, bay leaves and salt and pepper. Let simmer for about 1 hour or until barley is cooked. Remove bay leaves before serving.
