-3 small Yukon Gold potatoes-1/4 c 2% milk-1/4 c goat cheese crumbles-1 tbsp salt-pepper to taste
-Boil potatoes in water for 20-15 minutes until fork tender.
-Drain water from potatoes and let potatoes dry out in pan over heat for about 2 minutes.
-Add milk, cheese, butter, salt & pepper and mash until reaches desired consistency.
