Flourless chocolate cake

1lb bittersweet or semisweet chocolate16 tbsp unsalted butter8 eggs
Put a pot of water on to boil. Prehead the over to 325. grease a 8 or 9" springform pan and wrap the outside with heavy duty foil. Set pan in larger broiler pan. melt chocolate and butter in deep boiler pan until smooth. Meanwhile whip eggs until doubled in size and foamy (about 5 mins). Fold eggs into chocolate mixture 1/3 at a time until only a few streaks of egg can be seen. Pour into springform pan. Pour boiling water in broiling pan half way up the springform pan. Bake for 18-25 minutes (18-20 for 9", 20-25 for 8"). Cake should be at 140 degress when you take out. Pull out of water bath and set on cooling rack. Refridgerate overnight to set.
