Spinach & Potato Frittata

2 (ish) red potatoes, slices thin1 cup chopped onion1.5 cups chopped fresh spinach6 eggs (I used omega-3 eggs)about 3/4 cup ricotta cheese
0. Preheat oven to 400*.
1. In an oven-safe skillet on medium heat, cook the potatoes until soft, then add the onions and spinach. Continue to cook for a couple minutes until the spinach is wilted.
2. Beat together the eggs and ricotta (I just threw them both in a blender) and pour into skillet. Without stirring, transfer skillet to oven.
3. Bake at 400* for about 12 minutes, until the top is golden and eggs are cooked through.
4. Cut into 6 wedges and serve.
Serving Size: makes 6 servings
