Ingredients
5 lbs short ribs, cut in 2” pieces and trimmed1 tsp olive oil2 onions, quartered4 garlic cloves, chopped3 shallots, peeled1 cup dry red wine1 tsp dried basil1 tsp dried thyme1 tsp oregano28 oz can diced tomatoes, with juice2 cups hot beef stock1 tbsp tomato paste
Directions
Preheat oven to 350F
Heat oil in a Dutch oven until very hot. Add short ribs and sear on all sides.
Add onions, garlic and shallots.
Reduce heat to medium and cook 6 minutes.
Add remaining ingredients, mix well.
Bring to a boil, cover and place in oven.
Cook 3 hours.

    I did this on the grill, I think they turned out better this way. I didn't use the beef stock to cut down on sodium, I used water instead. I also did not use the diced tomatoes, turned out great and will do this again. - 8/20/09
