Ground Chicken and Veggie Mix

Ingredients

~ 1 package of Ground Chicken~ 1 medium zucchini squash~ 3 cups of fresh spinach~ 1/2 onion~ 1oz crumbled feta~ salt to taste
First ground the chicken in a skillet until brown
Once ground, drain fat if desired
In a wok, sautee sliced zucchini once heated to your desired consistency, add chopped onions until translucent
Once veggies to your desired consistency, add the ground chicken and mix well
Pour fresh spinach on top, turn down heat and allow spinach to wilt on top
Once the spinach is wilted, mix well with rest of ingredients and then salt to taste
At the end, sprinkle feta on top for garnishment
Serving Size: makes 4 1-cup servings
