Thubten's Amazing/Raw Coco-Nubbins

Ingredients
Here's the recipe:3 cups raw organic shredded coconut1 cup virgin coconut oil1/2 cup Sucanat1/2 cup raw organic cocoa powder1 1/2 T vanilla extract1 1/2 T chocolate extract (optional)1 1/2 T extract (any flavor you like)
Directions
Melt the coconut oil at under 115 degrees and pour into blender.
Add cocoa powder, Sucanat and extracts to blender.
Blend on high until emulsified.
In a large mixing bowl combine the shredded coconut and the mixture from the blender.
Mix by hand until the coconut is covered evenly.
Spoon the coconut into mini (24 muffin) muffin pan indentations.
Place muffin pan in the freezer for thirty minutes.
Remove muffin pan from the freezer and remove nubbins.
Store in freezer bag in freezer or fridge.

Serving Size: Makes approximately 24 nubbins.
