Colleen Vegetable Salad

Ingredients
1 package Sugar-free lime-flavored gelatin1 cup Water, boiling1/4 teaspoon Salt1 cup Pineapple, (canned) crushed with juice1 cup Cottage cheese1/2 cup Celery, chopped1/2 cup Carrot, grated
Directions
Mix gelatin, water, and salt together. Stir to dissolve. Stir in pineapple with juice. Chill until syrupy.
Fold cottage cheese, celery, and carrot into thickened mixture. Pour into mold or bowl. Chill until set.
