Ingredients
5 Lbs Beef tripe - Menudo3 cans 36.5 oz Bush's White Hominy2 Tbl Mexican Oregano leaves3-4 TBL Monterrey Menudo Mix16 C water
Directions
Bring menudo to boil and drain - 3 times to boil off fat and smell (this is very important)
on 4th water change cook menudo until soft 3-3 1/2 hrs
then add spices (to taste)
then add hominy (drain liquid from cans)
