Apple Butter Cups with Cinnamon Toast Caps

Ingredients
Whole wheat english muffinsapple butterground cinnamonsugarpeanut butter (optional, not included in the calorie breakdown)
Directions
Carefully scoop out the bread from the bottom half of the english muffin, being sure to preserve the curve of the muffin. Cut 4 cups by using a bottle cap, pizza table (those plastic things that come in pizza boxes to keep the box from the pie) or similar round object to trace with a knife, basically getting 4 circles from the muffin.

mix together a little sugar & cinammon, sprinkle over both the cups & the bread you've scooped out, and toast all that.

fill the cups with apple butter (you can use peanut butter also, or alone for a variety of choices) and serve with the toasted cinammon sccop-outs on top.

Serving Size: each english muffin makes 4 "cups"; I counted 2 "cups" as a serving
