Smoked Fish pie

Ingredients
1x 500grams Can of smoked fish, you can also use fresh smoked fish.1x Bunch of spinach1x Leek2x Spring Onion stalks1/2 Red capsicum1/2 Yellow capsicum1x Raw Onion *diced 3tbsp of cooking oilFOR THE SAUCE2x cups of skim milk50grams of Block butter1/4 cup of Flour2x slices of Colby ChesseTOPPING5X Medium sized potatos1/4 cup of milk25grams of Block butter
Directions
1.Boil potatos till cooked, drain, add milk and butter mash and set to the side.

2. Saute onion, spring onion, leek, red and Yellow capsicum till soft and translucent.

3. Lightly fry Spinach, place in bowl with sauted ingredients above.

4. Add the canned or freshly smoked fish to the bowl and seperate by flaking with a fork or you can use your fingers.

5.Make the sauce by melting the butter till bubbling add the flour add milk slowly while over a medium heat till it thickens add the chesse and stir till smooth, add to the bowl.

Mix all ingredients together and place in to a dish, add the mashed on top.

Place in oven for 30 mins on 200c till the mixture is lightly bubbling in the dish at the edges and the potato topping is brown and crisp.
