Ingredients
Directions
Boneless, skinless chicken breasts (weigh and cut to size if in P2).Large jar of salsa (make sure it has no added sugar and is protocol friendly)Avocado, sour cream, cheese, diced onions (if in P3)Brown rice or tortillas or taco shells or other toppings such as black/pinto beans or corn (if in P4)
1. Add boneless, skinless chicken breasts to the crockpot (weigh and cut to size if in P2).
2. Pour a large jar of salsa (make sure it has no added sugar and is protocal friendly) over the top and cook on high 5-6 hrs or low 8-10 hrs.
Chicken will be falling apart and delicious!
For P2 you can put this over lettuce for a chicken "taco salad".
For P3 you can really have fun with it, top with avocado, sour cream, cheese, diced onions. YUM!
For p4 and beyond, you can put it over brown rice or in tortillas or taco shells and add toppings. Or use the cooked shredded chicken to make enchiladas.
Its a really great option because everyone loves it - great for when you have company but don't want to serve "diet" food or draw attention to what you are eating. Can also use green verde salsa for a different flavor that's awesome too.
Serving Size: Makes 3 servings at 3.5oz chicken breast and 4tbsp salsa
