Halibut With Potato Succotash (Green Giant)

500 g halibut2 tbsp olive oil2 cups peeled diced yukon gold potatoes2 cups lima beans1 cup frozen corn0.5 cup diced red pepper0.25 cup diced onion1 tsp fresh chopped thyme0.25 tsp garlic0.25 tsp pepper0.125 tsp cayenne pepper
Heat oven to 425 degrees. Spray baking pan with cooking spray. Place halibut in pan. Brush with 1 tbsp olive oil. Heat remaining olive oil in skillet. Ad potatoes and cook 10 min. Stir in lima beans, corn, red pepper and onions. Cook 3-5 min. Spoon mixture around halibut. Combine seasonings and sprinkle over veg + fish. Stir veg slightly. Cover loosely with foil. Bake for 15-20 min. Squeeze fresh lemon juice over fish if desired.
No salt added because of low sodium diet. Recipe called for 0.5 tsp.
