Home Made Chicken Gravy over potatoes

Ingredients
I used a leftover whole chicken that I had roasted 2 days prior for dinner so it was already cooked. Cover with water, cover and boil/simmer for about 30 min. Pull chicken out and set aside to cool. Pour chicken broth in bowl, set aside. Using same pan, sprinkle with olive oil, and cook following ingredients til tender.Celery 3 stalks choppedGarlic, 1 tbsp mincedOnions, raw, .5 cup, choppedMushrooms, fresh, 1 cup, choppedSalt 1/2 tspPepper 1/2 tspWhen chicken is cooled, pick meat off carcus and put into cooked veggies. Sprinkle mixture with flour (about 4 tbsp.) stir. Slowly add broth. Cook until thickened.Serve over mashed potatoes or noodles. Yummy
