Chili's Mock Chicken and Green Chili Soup

Ingredients
2 tbsp olive oil 1 med. onion4 tsp minced garlic4 15 ounce cans of chicken broth 2 cans of lime and cilantro Ro-Tel tomatoes1/4 cup lime juice14 ounces cooked turkey or chicken breast, chopped1 cup rice1 avocadofresh cilantro, chopped and to tastesalt and pepper to taste
Directions
1. Add oil to pot big enough to cook entire meal. Add onions and cook until transparent (8-10 minutes). Add garlic and cook for additional minute.
2. Add chicken broth, Ro-Tel, and lime juice. Gentle boil for 10 minutes.
3. Add chicken or turkey and simmer for 5 minutes.
4. Cook rice according to package in a separate pan and chunk up avocado.
5. Ladle soup into individual bowls and add a spoonful of rice, a spoonful of avocado and a generous sprinkling of cilantro.
