Slow Cooker Curried Sweet Potato Soup

Ingredients
Canola Oil, 1 tbspCelery, raw, 1 stalk, medium, choppedOnions, raw, 0.5 cup, choppedGarlic, 1 clove, mincedCurry powder, 1.5 tbsp2 large sweet potatoes (yams), 2 cup, cubesApples, fresh, 1 small, choppedAurora Vegetable Bouillion cubeWater, 8 cupsCoconut Milk, from can, 0.5 cup
Directions
Heat canola oil in skillet over medium heat, saute onion, celery and garlic until soft. Reduce heat slightly, add curry powder and stir to cook. Add bouillion cube to 1 cup of boiling water, stir to dissolve and add to skillet. Bring to a boil, stirring. Put cubes of sweet potato (yams) and apple in slow cooker, pour onion-celery-garlic mixture over the vegetables, add 7 more cups of water, and heat in slow cooker on high for 3 hours. Add coconut milk, and puree with immersion blender.
