Garlic Spinach Stuffed Chicken

Ingredients
4 boneless skinless chicken breasts1 tbsp olive oil1/2 yellow onion, chopped3 cloves garlic, minced10 ounces Fresh Express Baby Spinach 2 tomatoes, chopped1/2 cup shredded part-skim mozzarella or crumbled feta
Directions
Flatten and butterfly cut chicken breasts.
Brown chicken and cook through.
Meanwhile, heat the olive oil in a separate pan. Add the onions and garlic, cook for five minutes, then add the tomatoes and spinach. Cook until the spinach is wilted.
Divide the vegetables among the chicken, top with cheese and heat just until the cheese melts.

    unlike Jen, I am a chef by profession. I changed it up slightly: Sauteed the garlic and onions to golden, then added the rest - added some chopped mushrooms. Pounded out the chicken breast very thin, put in the stuffing and rolled it up. Put the rolls in a baking dish and baked until done. Yum! - 7/10/07

    I'm curious why the picture never matches the recipe? I don't see tomatoes. I don't see where it says to roll it or how to do that. For those of us that aren't "cooks" it would be nice to have a picture of the actual dish. I'm such a bad cook, I need the picture as guidance. Thank you! - 8/26/14

    I didn't put in the tomatoes because everyone in my family despises them. I baked it at 350 for 30 min. Mixed about 1/2 cup of parmesan with spinach, since I had no mozzarella. - 3/19/08

    I found this recipe to be very bland and I added cheese. My bf really enjoyed it though. I'll try again but add some spices to the mix or possibly use a light marinade for the chicken to up the flavor. Good base to start with! - 3/31/11

    This was amazing! Everything I used was fresh. I cut out the tomatoes but used mushrooms instead and add asiago and provolone cheese to the top since I didn't stuff them. It taste just as good if not better than something you get at an expensive restaurant. Everyone loved it. Will make very often! - 8/20/10

    This recipe is going into the regular rotation by unanimous vote. I had tenders instead of breasts and so I just sauteed the veggies & then threw the gorgeous "filling" over the top of the chicken and baked the rest of the way. Was even better for lunch today. - 5/4/09

    All enjoyed at an informal dinner party. To simplify serving, prepared early in afternoon, stuffing breasts with vegetable mixture and some mozzarella, more mozzarella on top and placing in baking dish and refrigerating. After guests arrived, 20 min covered in 350 degree oven. Cheese melted. Great. - 3/2/17

    Leave out the tomatoes, they ruin so many dishes, too watery and over powering. Spinach and garlic and any cheese works better. - 3/25/14

    This is alot like a recipe I use to make before I found this one. With the garlic and spinach it is so good! What I do is, while the chicken is uncooked I did add small amount shredded sharp cheddar on top the filling, rolled them up sprinkled with some crushed wheat ritz crackers and baked them.:) - 3/15/07
