Mandarin Chicken Breasts

Ingredients
4 boneless skinless chicken breasts2 teaspoons extra virgin olive oil1 11-oz can mandarin oranges2 tbsp firmly packed brown sugar1 tsp prepared mustard3 tbsp ketchup1 tbsp vinegar1 tsp cornstarch1/2 tsp cinnamon1/8 tsp ground cloves
Directions
Trim excess fat from chicken. Rinse chicken with cold water and pat dry. Coat a large skillet with cooking spray and add oil. Place skillet over medium-high heat until hot, and add chicken to skillet. Cook 2-3 minutes on each side or until lightly browned.

Drain oranges, reserving juice. Set oranges aside. Combine juice and remaining ingredients; whisk well. Pour over chicken in skillet. Cover and simmer 30 minutes, turning occasionally. Add reserved oranges and simmer an additional 5 minutes. Transfer to a serving platter and pour sauce over chicken.

This recipe goes very well with rice! It also nicely complements the sesame carrotsI have posted as well. Enjoy!

    The sauce on this was very good! Interesting flavor combinations. Tasted just like a sweet and sour sauce you might get in a restaurant. I think it would probably be good with pork too. - 12/15/07
