Veggie Quesadilla

Ingredients
1 whole wheat flour tortilla3/4 oz mini babybel light cheese1/4 cup frozen spinach1 glove garlic 2 tbsp chopped onion2 medium mushrooms sliced
Directions
Slice mushrooms, chop onions, mince garlic, shred cheese and defrost spinach.
Spray small pan with cooking spray and cook mushrooms, onions and garlic. Add spinach.
In another pan place tortilla over medium heat.
Layer cheese then veggie mixture and top with cheese on one half of quesadilla.
Fold quesadilla in half and cook on each side 3-4 minutes until cheese is melted.
Slice into 2-3 slice
Makes one serving.

    I sauteed the spinich, beet greens, kolhrabi, shredded carrot, and 1oz. cheddar cheese to this recipe. I left out the babybel cheese. It was great. I also added tomatoe flour tortilla's. My variation. - 6/28/09
