Green Chile Chicken Stew

For ingredients take into account your crockpot size. I have a larger crock pot. The easiest way to prepare is to cook the chicken (i use the microwave steamer tray to keep the chicken juicy).
Dice the veggies to your liking. Add the veggies and seasonings (minus tomatos). I use hot green chile but if you dont like chile leave it out or use a medium or mild chile.
Slice the chicken (or dice) and place the chicken on top of the veggies. Add your tomatoes on top of the chicken. Add the reduced salt chicken broth leaving a half inch below the lid. Crockpot cooking with liquid will make liquids multiply and cause spillage.
I add non salt seasonings to taste. Let the seasonings do the flavoring.
Serving Size: about 8-10
