1/2 cup beets2 cups arugula3 oz Cevre Goat Cheese1/4 cup Shaved Apples4tbs. olive oil4tbs balsamic vinegar2tsp sugar1tsp. Dijon mustard1 garlic clove minced
Roast beets in a 375 degree oven until tender. Peel and chop. Shave apples. Slice goat cheese. Mix up vinegar, sugar, Dijon mustard with the olive oil. Toss all together with the arugula
