2 Tbs Olive Oil1 onion, diced3 celery stalks, diced3 tomatoes, diced1 tsp salt2 cans of cannellini beans (15 oz cans)2 cloves garlic, minced6 cups chicken broth1/4 cup fresh parsley
Heat olive oil in pot, add diced onion and celery, saute 5-6 minutes until soft. Add tomato and salt, saute for additional 2-3 minutes. Add chicken broth, garlic, and cannellini beans. Bring to a boil, then reduce heat and simmer for 20 minutes. Add parsley, continue to simmer for 5 additional minutes.
