Oat Pancakes with Self Ground Oats/Flax

1.25 cups rolled oats1 t. flax1T apple pectin powder1/4 C Buttermilk powder1 t. baking powder1 C water or amount needed for consistency desired.
makes 4 6 inch pancakes
Grind 1 cup of the rolled oats and flax seed in processor such as a designated coffee grinder. Add apple pectin, buttermilk powder, baking powder. Add water. May add more water to make a pancake mixture thinner if you want. Add 1/4 cup of remaining rolled oats.
Spray iron skillet with oil spray and cook at medium to low heat till one side cooked, flip over and cook 2nd side.
