Chicken Tortilla Soup

2 boneless, skinless chicken breasts1 T olive oil1/2 t minced garlic1/4 t ground cumin (add more)2 (14.5 oz.) cans chicken broth1 cup frozen corn kernals1 can black beans1 cup chopped onion1/2 t chili powder1 T lemon juice1 C chunky salsaOptional: tortilla chips, shredded cheese
Dice chicken or shred later.
In a large pot over medium heat, saute the chicken in oil. Add garlic, onion and ground cumin and cook until onion is softened. Add broth, corn, chili powder, lemon juice, salsa and beans. Simmer for 30 minutes.
Top with cheese and crushed tortilla chips, but remember to add the extra topping in your calculations.
Serving Size: 4-6
