Kale & Black Eyed Pea Stew

Ingredients
Black Eyed Peas, 1.5 cup pre-soaked, then cooked til softKale, 16 oz (454 grams) fresh, chopped1 large onion, chopped1 tsp. olive oil1 tbsp. salt1 tbsp. pepper1 tbsp dried garlic4 small sundried tomatoes, about 14 grams1.5 cups chicken broth
Directions
Saute onion in olive oil, add kale slowly, and gradually include the broth, salt, pepper, dried garlic, and any other herb you like, such as rosemary. Stir and simmer about 30 minutes. Enjoy with cornbread or as a topping on rice.
