Lentil Cheese and Rice Casserole

.75 cup lentils.75 cup rice3 cups water.5 cup shredded low fat cheddar or colby cheeseMexican spices to tastesalt to tastemedium/large ceramic bowlfoil
Preheat the oven to 360 degrees.
In a medium/large ceramic bowl, combine rice, lentils, and water. Put in the spices and some of the salt, then put foil over the top of the bowl, then place it in the oven.
When the mixture looks as if it has some solidity to it, then add the cheese, stir well, then place in the oven for five minutes to let the cheese melt.
If it needs it, add a little more salt, then divide into 3 or 4 servings
enjoy warm!
Serving Size: divide into 3-4 equal helpings
