2 Louisiana Hot Link Sausages1 tbs. olive oil1 medium onion chopped1 red or green bell pepper chopped5 celery stalks chopped1 medium zucchini chopped2 cloves garlic minced4 cups chicken broth1 cup brown rice1 can Rotel Original tomatoes with green chilies1 can diced tomatoes4 cups fresh or canned back-eyed peas2 cooked chicken breast (left-overs are best)3 cups water½ tsp. Cajun seasoning¾ tsp. cumin4-5 dashes of Worstershire Sauce¾ tsp. OreganoSalt and Pepper to taste
Directions
Slice hot links cross-wise and fry in a large stock pot. Add olive oil, onion, bell pepper, celery, zucchini and garlic. Sautee until tender. Add remaining ingredients and cook covered, on low until rice is cooked, stirring frequently. Add more water if needed.
