Chicken or Tofu Marsala

Ingredients
4 cloves garlic1 T. olive oil2 small bell peppers, diced1/2 tsp. dried oregano (or 1-1/2 tsp. fresh)2 c. marsala wine12 oz. chicken breast OR 1 lb. extra firm tofu (NOT silken), cut into 1-inch cubes** 3/4 lb. cremini mushrooms, sliced thickly1 (14 oz.) diced tomatoes, drained OR 2 c. diced seeded tomatoes1/4 c. fresh basil, chopped
Directions
In pot over medium heat, cook garlic in the oil just until it sizzles and then add chicken (if using) and saute 4-5 minutes; then add the bell peppers, oregano, and salt. Cook, stirring often, for 2 minutes, till peppers soften. Add the Marsala (and if using, tofu) and cook on high heat for 4 minutes to reduce the wine a bit. Add the shrooms and tomatoes and cook on medium-high heat for 5 minutes. Add the basil and salt and pepper to taste. Serve with plenty of crusty bread to soak up the flavorful broth.
