Pineapple-Cranberry Muffins

Ingredients
1 can (20 oz) Crushed Pineapple in pineapple juice1.5 c all-purpose flour2 EnerG Egg Replacer eggs, prepared in water1 Tbsp Brown sugar1 Tbsp Splenda1 tsp cinnamon1 tsp lemon extract1/4 tsp salt1/4 c dried cranberries, chopped fine
Directions
Preheat oven to 350'F.
Mix all ingredients in a large mixing bowl.
Fill lined muffin cups with about 1/4 c of the mixture. Bake for 20-25 minutes, or until done.
