Ingredients
Part 11 c. celery,chopped1 c. onion, chopped4 fresh mushrooms, diced, optionalPart 23 1/2 c. cooked Brown Rice (Basmati preferred)1 c. diced soy chicken, drained1/2 c. water chestnuts sliced (one can)Part 31 c. hot water1/3 c. raw cashews, washePart 41/2 c. water1/2 c. eggless mayonnaise(vegenaise)1 TBS Bill's Best Chik'nish Seasoning1 TBS Braggs Amino Acids, diluted 1:1 with water1/2 tsp garlic powder1/4 tsp celery salt
Directions
Ingredients for Part 1 Saute until tender with nonstick spray or a little water.
Part 2 ingredients--drain water chestnuts. Combine these ingredients with sauteed vegetables.
Part 3 ingredients--combined into blender and whiz until smooth as cream.
Part 4 ingredients--add to blenderized cashews. Blend until just mixed. Fold this into rice vegetable mixture.
Spoon into a 9x13 casserole, sprayed with non stick spray
