Thai Green Curry with Chicken & Vegetables

2 tbsp Extra Virgin Olive Oil (cold pressed)3 heaped tsp Ayam Thai Green Curry Paste1 lge Onion, sliced2 Chicken breast (no skin)2 cloves Garlic, crushed or chopped500g Fresh or Frozen Mixed Vegetables1 can (140mL) Ayam Coconut CreamSalt to taste
1. Heat oil in wok or saucepan over medium heat
2. Add onions and garlic and cook lightly
3. Add chicken and cook through
4. Add curry paste and mix through
5. Cook for 2-3 minutes
6. Add vegetables and cook for about 2 minutes
7. Add coconut cream
8. Bring to a simmer for another 5 minutes
Serve with a bowl of steamed rice
