Bacon and Leek Pasta

Ingredients
300g bacon pieces, NO FAT1 Fresh Leek, thinly sliced1 Fresh Zuchini, thinly sliced1/2 Red Capsicum, diced finely300g tub of LITE sour creammixed herbs (optional)1 pkt wholemeal fettucine pastagrated LOW FAT cheese (optional)
Directions
Heat a large saucepan of water until boiling then add the pasta and cook for recommended time of packet. while pasta is cooking put bacon pieces in a large frying pan with a LITTLE oil and fry until browned. Remove from pan and drain on paper well.
Add chopped leek, zuchini and capsicum to the pan and fry in remaining bacon juices and oil til they pick up a little colour. Lower heat and place lid on to cook vegetable until softened slightly approx. 5 mins.
When ready turn heat back up, add bacon pieces and sour cream stirring until cream thickens to a lite sauce. Drain pasta and stir through sauce.
Serve with sprinkle of cheese if desired.
