Oatmeal Cookie Breakfast Bread

4c. Old-fashioned rolled oats1 can frozen 100% apple juice concentrate, thawed2c. water1c. raisins (or other dried fruit)2 2/3c. whole wheat flour2 tsp. baking soda2 tbsp. ground cinnamon
In a large bowl, combine oats, apple juice concentrate, water and dried fruit. Mix well, cover and allow to sit for at least an hour.
In a separate bowl, mix flour, baking soda and cinnamon. Combine oat mixture with flour mixture (will be a cookie dough consistency). Divide dough into two 9" lightly greased cake pans. Bake at 400 F for 25 minutes, then reduce heat to 350 F for an additional 10 minutes.
Immediately after removing from oven, cut each loaf into four section and wrap tightly in foil while still very hot. This will help keep the bread moist, as there is no fat in the bread to keep it moist.
One serving = 1/8th of loaf
